In a historic place near the center of Chiusa di Pesio stands La Regia Fabbrica dei Gusti: a pizza restaurant with particular attention to the sustainability of the territory. For this reason, in the kitchen we offer a seasonal menu respectful of the periodicity of the ingredients and preferring local products. In particular, to convey in the dishes the flavor of the right ripening of vegetables and fruits and to make known the typical products of our territory.
We offer an Italian cuisine with some Piedmontese dishes and French hints, the ingredients are strictly seasonal and mainly fresh. We are committed to using local products from local farms and products from our garden and our woods. The main products of the territory are the Langhe wines present all year round, depending on the period we use: fresh and smoked trout of Agritrutta (San Biagio), the blue sheep of A. Cascina Veja (Chiusa Pesio), the capons of morozzo (Fabrizio Dutto (Morozzo), wild boar ham and bresaola of Francesco Gola (Chiusa Pesio), toma val pes del Coc Ner (Chiusa Pesio), saffron of our production or of La Lunatica (Roccaforte Mondovi), porcini mushrooms of the Pesio Valley, black and white truffles of the Langhe, fresh eggs of Uovo del mulino (Boves), fresh egg pasta and gnocchi of our production, leeks of cervere.
